Thirsty Thursday? Not Any More!


We missed our Mixology Monday, due to the launch of our new web site. (You should check it out. Click here). Since it's Thirsty Thursday, we figured a pair of cocktail recipes would work.

Rum Swizzle

This recipe is for a pitcher of about 6 drinks.

Ingredients
4 oz Gosling's Black Seal Rum
4 oz Gosling's Gold Rum
5 oz Pineapple Juice
5 oz Orange Juice
¾ oz Grenadine
6 Dashes of Angostura Bitters
  

Into a pitcher-full of crushed ice, add Gosling's Black Seal Rum, Gosling's Gold Rum, pineapple juice, orange juice, Grenadine or Bermuda Falernum and Angostura bitters. Churn vigorously until a frothing appears or mix in a cocktail shaker. Strain into a martini glass.

Teeling Summer Julep

The predecessor to the Mojito, some historians say the Julep was born in the early 1700s. Using fresh, seasonal ingredients, this Teeling Summer Julep (made with Teeling Irish Whiskey) is the ultimate accompaniment to your summer evenings! Note that this requires some advance planning.

• 1.5oz Teeling Small Batch
• Strawberry and balsamic vinegar shrub (a simple strawberry and balsamic vinegar reduction)
• Fresh mint
• Top with soda & crushed ice

For the shrub:
• 1 cup of sliced, fresh strawberries
• 1 cup of granulated sugar
• 1 cup of balsamic vinegar
• 1 handful of fresh mint leaves

1. Muddle all the shrub ingredients together
2. Leave refrigerated overnight
3. Heat gently over a low heat until all the sugar has dissolved

Constructing the cocktail:

1. Pour 1oz of shrub into a suitable glass, preferably a Julep cup.
2. Add 1.5oz of Teeling Small Batch and approximately 10 bruised mint leaves.
3. With a mixing spoon, stir the liquid for 20-30 seconds.
4. Add ice (preferably crushed) to the brim of the glass and give the cocktail an additional stir.
5. Add more crushed ice, top off with soda water and some fresh mint and strawberry garnish.

Hennessy VS Shepard Fairey Edition

Beringer Napa Valley Sauvignon Blanc

Not exactly new, but we got this amazing summer white wine at such a great price that we wanted to highlight it.

The Beringer Napa Valley Sauvignon Blanc is an enticing wine with aromas of kaffir lime, nectarine and honeysuckle. The palate has a pleasing mouthfeel, notes of lemon zest, tangerine, and a bright acidity carrying into the finish.

Svedka Peach

Another summer staple is a juicy, ripe peach. SVEDKA bottled that flavor, and it's available at Joe Canal's in Lawrenceville and Woodbridge.

Here's a quick mid-week cocktail.

1 part SVEDKA Peach
2 parts cream (or milk)

Pour the SVEDKA peach and cream (or milk) into an ice-filled shaker. Shake vigorously. Strain into a rocks-style glass that's been filled with fresh ice. Garnish with a peach wedge.

For a twist on this cocktail, make it in a blender.

Late last night, the all-new Joe Canal's web site came on-line. With its sleek, modern look, added features and  improved functionality, we think the new web site will be your new BFF.

Friday Grab Bag

We made it to Friday, meaning it's time for our weekly round-up of news, events, and new products. The big news is that we will soon be rolling out an all-new web site. Still located at www.jcanals.com, the web site will have a fresh, sleek and modern look, with easier navigation and more features.

Events

Lawrenceville: We have our regularly scheduled wine tastings this weekend. Please stop in for the free tasting on Friday, from 4-6pm, or Saturday, from 2-4pm. The tasting menu is here.

Woodbridge: We're also on our regular wine tasting schedule for this weekend. Please join us on Friday, 4-6pm, or Saturday, 1-3pm.

Tonight, we also have our final Founders specialty tapping of the month. We'll tap a keg of Curmudgeon Old Ale at 6pm, right after the wine tasting ends.

Looking ahead one week, we have a special Cutty Sark "Cutty Back" tasting next Saturday, August 2, from 1-4pm. The Cutty Back is Cutty Sark Scotch whisky with PBR, and it's also known as the Hipster Grenade.

Save the Date! We're busy setting the details, but we're having a Scotch dinner, featuring The Macallan, on Thursday, October 2.

What's New

We've received 9 new (or new vintages) Bordeaux wines. At one end of the price scale (but still high on the quality scale), we have the 2010 Château Le Grand Moulin Grande Réserve Blaye Côtes de Bordeaux.

It's Merlot (70%) with supplementary Cabernet Franc (25%) and Malbec (5%,) offering this wine a ruby ​​color and a nose of red fruit which is backed by the wooded roasted notes. A smooth entry follows a well structured palate, with silky tannins marked by wooded persistent finish. Pairs nicely with grilled beef or cheese.

Scored at 90 points by Wine Enthusiast. Available for only $9.96 in the Bottle Club®.


Looking at the more age-worthy Bordeaux, we have the 2010 Chateau Malartic Lagraviere Pessac-Leognan. This wine rated 93 points from Wine Spectator, 94 from both Wine Advocate and Wine Enthusiast, and 95 from James Suckling. From the James Suckling review: "Impressive nose with leather, dark polished fruit and flowers. Wonderful mouthfeel with soft silky tannins and beautiful texture. Really well put together. Powerful and rich with loads of fruit and ripe tannins. Very ripe."

Domaine du Bouscat Bordeaux Superieur Wine

We're always looking for a well-rated wine that's priced so that we can enjoy it every day. The Domaine du Bouscat Bordeaux Superieur rated 88-90 from Wine Advocate, and comes in under $10!

Domaine du Bouscat Caduce is the entry level wine for Domaine du Bouscat. The wine is produced from an 8 hectare vineyard that is planted to 70% Merlot, 20% Cabernet Sauvignon, 5% Malbec and 5% Cabernet Franc. On average, the vines are 37 years of age.

The vinification of Domaine du Bouscat Cauduce takes place in unlined cement vats. This follows a 3-day cold soak at 12 degrees Celsuis. The maceration lasts for an average of 25 days and is punctuated with regular microbullages. The wine of Domaine du Bouscat Cauduce goes through a unique aging process. The wine is aged on its post malolactic lees for four months in vat before it’s transferred to a unique combination of new and used French oak barrels.

From the Wine Advocate review: "A blend of 70% Merlot, 20% Cabernet Sauvignon and the rest Malbec and Cabernet Franc that hit 13.5% natural alcohol, it reveals abundant white chocolate and black currant fruit intermixed with hints of tapenade and underbrush. What's For Dinner? Find Out Here!

At our house, we're always looking for simple, tasty new recipes to try. And we also want to pair them with something we carry. Fortunately, our industry partners offer us a lifeline, and we'll share some today.

The Monti Francis

Courtesy of St. Francis Winery, this is a simple and fruity sandwich to satisfy any palette.

Ingredients:
2 slices flat bread
2 tsp cream cheese
4 spinach leaves
2 strips bacon
2 slices grilled peaches
2 slices cheddar
1 egg, beaten
2 Tbs butter, for sauteing

Preparation:

Heat butter on med in skillet. Spread cream cheese inside each slice of bread. Assemble with ingredients then dip into egg. Place in skillet and saute until brown, flip.

Pair with St. Francis Sonoma Chardonnay, only $11.09 in the Bottle Club®.

Boston Lager Potato Salad

Perfect for when you need to bring something to a neighborhood cookout.Courtesy of Samuel Adams Boston Lager.

Ingredients:
36 ounces (4 1/2 cups) Samuel Adams Boston Lager
1 ½ pounds Yukon gold potatoes
1/4 cup diced red bell pepper
1/4 cup diced celery
2 tablespoons chopped scallion, white and light green parts 
2 tablespoons diced red onion
2 tablespoons Dijon mustard
1 teaspoon drained capers

In a large pot, bring the lager to a boil over high heat. Immediately reduce the heat to medium so that the beer simmers. Add the whole potatoes, let the beer return to a simmer, and cook for 20 to 22 minutes or until fork tender. Drain and set aside to cool for about 10 minutes or until cool enough to handle, but still hot.

Peel the cooked potatoes and cut into 1-inch-thick cubes. Transfer the potatoes to a mixing bowl. Add the peppers, celery, scallions, onions, mustard and capers and toss to mix. Let the potato salad rest for about 15 minutes for the flavors to develop and then serve while still warm. Serves 6.


Blueberry Bourbon Cream Cheese Pie

Courtesy of Maker's Mark®, this dessert is perfect for hot summer days, and might just be the second best use of bourbon. (The best use is, of course, to drink it.) The sweet blueberries are perfectly paired with the slightly salty cream cheese, and the bourbon laces it all together in every sweet, summery bite.

Prep Time: 2 hours
Cook Time: 2-1/2 hours
Level: Easy

Ingredients:
4 tablespoons Maker's Mark® Bourbon
4 cups fresh blueberries
3/4 cup sugar
3 tablespoons cornstarch
2 tablespoons fresh lemon juice
1/2 cup cream cheese, at room temperature
1 pre-baked pie shell

1. Mash 2 cups of the blueberries with the sugar, cornstarch, lemon juice and 2 tablespoons of Maker's Mark® Bourbon. Place the berry mixture in a medium pan and place it over medium heat.
2. Bring the filling to a boil, stirring, and boil it until it is thickened and clear, about 3 minutes. Let the filling cool to room temperature.
3. Beat together the cream cheese and the remaining 2 tablespoons bourbon. Spread the cream cheese over the bottom of the pie crust.
4. Stir the remaining blueberries into the cooled berry filling. Spread the berry filling over the cream cheese layer. Chill the pie at least 2 hours, or until it is cold. Serve with lightly whipped cream.

*Note: Pre-bake the pie shell according to package directions at least two hours beforehand to allow time to cool.

The Most Popular Grape

Cabernet Sauvignon is arguably the most popular, and most widely-planted, varietal. For all of the places where it's planted, however, a top terroir clearly is Argentina, especially the high altitude Mendoza region. Today's featured wine, the Antis Cabernet Sauvignon Reserva, is a classic example of Argentine winemaking.

Antis Wines is dedicated to producing premium and reserve wines in Mendoza. Argentina. They are located in Maipu, on the foothills of the Andes Mountains. Their philosophy is centered on achieving wines that speak of the land where they are born and crafted. They believe that their task is to recreate and enhance the potential contained in the grapes, using state of the art knowledge, the best materials and latest technology.

In 2002, Antis built a new wine making facility, with a capacity of 300,000 liters in refrigerated stainless steel fermentation tanks, a cave for barrel aging in Bordeaux-style oak barrels and a temperature controlled wine maturation and bottle storage area.
Once grapes have achieved optimum ripeness, they are harvested by hand, and Antis uses only those grapes that are intact. They sort and discard those that are unsuitable for their winemaking standards.

Grapes are de-stemmed and transferred, nearly intact, into stainless steel vats, where they undergo maceration from 21 to 28 days, to extract color and flavor. Alcoholic fermentation is carried out using native yeasts. Throughout these steps, Antis performs four cycles of remontage on every tank each day.

The white wines follow a different vinification path. Malolactic fermentation of the premium wines is carried out in stainless steel tanks and in oak barrels, in the case of the reserve wine. Oak maturation takes place in small French oak barrels from central France; for  12 to 14 months, in the case of the reserve wines, and for six months, in the case of premium red varietals.


Antis Cabernet Sauvignon Reserva is produced from a selected parcel in the Alcuchu vineyard, planted with 15 year old vines. The wine is matured in 50% new small French oak barrels. It has an intense ruby color and and a very aromatic nose full of ripe plum and berries. In the mouth, it shows plenty of fruit flavor, with ripe plum and berries, with hints of cocoa and spice. This reserve wine carries a Bottle Club® price of only $12.96, making it a perfect choice for any day of the week.

In addition to the Cabernet, look for the Antis Reserva Malbec, the Classic Red Blend and the Torrontes.

The New Brew Preview

Here's a look at what we're expecting to be delivered this week. These are all available in limited quantities, so please call the store to confirm your beer of choice is still in stock.

We will not post information here about any of the Pumpkin beers, but we can say that they are in the pipeline.

The Bruery

We have several due in from The Bruery, starting with Mischief.

Mischief is a hoppy Belgian-style golden strong ale. This wickedly good golden ale is fiendishly dry-hopped with American hops to add a layer of complexity and mystery to its fruity, dry Belgian-style character. Citrus and resin diabolically combine with ripe melon, pear and slight peppery spice in a precariously effervescent mixture. Enjoy it, but you’ll want to keep an eye out.

Pair with crispy skinned loup de mer, lemongrass, or pulled BBQ chicken and pork.

Also due in this week: Hottenroth and Smoking Wood.

Flying Dog Dead Rise Old Bay Summer Ale

Dead Rise was brewed to highlight the indelible, bold character of OLD BAY with citrus hop notes and a crisp, tart finish. Pair it with tables piled high with shrimp, corn, and Maryland Blue Crab.

Dead Rise was brewed to celebrate OLD BAY's 75th anniversary and proceeds benefit True Blue, a program that advocates on behalf if the Chesapeake Bay's 5,500 watermen.

5.6% ABV, 25 IBU's. The malts, hops and yeast are all proprietary.

Great Divide Brewing

We also have two due in this week from Great Divide. First up is Showdown Rye IPA.

Showdown is an IPA reimagined. With a heaping addition of hardy rye, this copper-hued beauty delivers an unmistakable spicy rye character, while a burly dose of American hops evokes the piney aroma of untamed wilderness. Balanced, bold, and brave, Showdown claims the prize. 8.3% ABV.

Pair with chipotle pork enchiladas, refried beans, fire-roasted corn salad, smoked gouda, s'mores.

Also look for Great Divide Heyday Belgian-style White Ale.


Lost Abbey Witch's Wit

AROMA: There are tons of esters present in the beer as well as a soft yeast note. This beer has also been spiced with Grapefruit Zest, Orange Peel and Coriander. Each of these is subtly stated so as to not overwhelm the nose of the beer.

TASTE: Most definitely, this first and foremost a wheat ale. You can taste the wheat from start to finish. A faint toasted note from the addition of flaked oats is present in the beer as well. This is a light bodied beer that finishes with a spicy layer in the end. The overall impression should be an easy-to-drink refreshing ale, in the style of a Belgian Witbier.

Pair with white fish, salads, cheese.

Lagunitas Day Time

We wrap up this preview with maybe the most limited of all, Day Time.

Sometimes you want a beer, then you realize how much crap you need to do before you call it a day. This is it. Nicely dosed with Big, Round Hop Flavors and a Toasty Malt Foundation to satisfy your every need. But it still lets you stay in the game to do what needs to be done. Yup.

4.65% ABV and dosed with the latest cutting-edge experimental yet-to-be-named hop varities for juicy aroma and resin-y hop flavors.

Again, your best approach is to call the store to check for available stock on these beers.

Lawrenceville: Tonight is the specialty tapping of Founders Imperial Stout, at 5pm. Our regular wine tastings resume this weekend, with tastings from 4-6pm on Friday, and 2-4pm Saturday.

Woodbridge: It's a normal weekend of tastings and tappings. We start with the regular Friday wine tasting, 4-6pm. At 6pm, it's the specialty tapping of Founders Rubaeus. And on Saturday, the wine tasting will be 1-3pm. You can find the tasting menu here.

What's New

Joe Canal's is adding a number of Antis Wines products to our portfolio.

We're also receiving a number of new, highly-rated Bordeaux wines. At on end of the spectrum is the 2010 Chateau La Lagune Haut Medoc. This rated 94 points from Wine Advocate. Their review: "Another great success from proprietress Caroline Frey, the 2010 La Lagune provides an essential drinking experience, with notes of Asian plum sauce, mulberries, kirsch liqueur and black currants. The wine also exhibits a savory, rich smokiness and subtle lead pencil shaving notes. Full-bodied and pure, combining both elegance and power, this is a brilliant, very approachable effort that should hit its stride in 5-7 years and last for at least two decades. Think of it as a hypothetical blend of the 2005 and 2009. Kudos!" Available in the Bottle Club® for only $54.99.

Way into the Fine Wine part of the spectrum is the 2010 Chateau Mouton-Rothschild. In the first tasting, Wine Advocate rated it in the 97-100 point range. A second tasting yielded a rating of 98+ points. The review: "Only 49% of the production made it into the 2010 Mouton Rothschild, which has a strikingly beautiful label by Jeffrey Koons. This is a truly great wine, with a very high percentage of Cabernet Sauvignon (94%) and the other 6% Merlot. At 13.9% natural alcohol, Mouton’s director, Philippe Dhalluin, has clearly produced another 50- to 60-year wine that has a chance at perfection in about 15 years time, when I suspect this wine will be rounding into drinking condition. It is dense, rich and full-bodied, with the classic Mouton creme de cassis, forest floor, licorice and floral notes, but also some blueberry and hints of subtle espresso and mulberry. The wine has more minerality and precision than the rich, extravagantly opulent 2009, and while that may please some, others will have their patience tested as they wait and wait for this compelling Mouton Rothschild to hit full maturity."

The New Brew View

We'll take a look at some of the beer, ale and malt beverages that have just arrived, or are about to arrive, in Lawrenceville and Woodbridge. Generally speaking, these are available in limited quantities. If you see something you like, call first to confirm availability, then go grab it!

For you seasonal beer lovers, here's your notice that pumpkin beers are due in any day now.

Allagash Fluxus

Fluxus is a beer brewed every year to commemorate the anniversary of the first beer sold by Allagash in July 1995. The name Fluxus is Latin for continuous change, something we all seem to find ourselves in. Every year, Fluxus is brewed with a different recipe, giving our brewers a chance to push the limits of beer.

Allagash Fluxus is brewed to help fund a scholarship set up for pediatric nurses at The Barbara Bush Children's Hospital at Maine Medical Center.

Maine Beer Co. Mo

This is Maine Beer's first run at an American Pale Ale.  Flavors and aromas of zesty citrus, passionfruit, and pine present themselves throughout. A very subtle malt sweetness for balance, but this is intended to finish dry. 6.0 ABV.

Stone Unapologetic IPA

A collaboration between Julian Shrago Brewmaster & Co-owner, Beachwood BBQ, Jamil Zainasheff Chief Heretic & Brewmaster, Heretic Brewing Co. and Mitch Steele Brewmaster, Stone Brewing Co.

Tasting Notes, by Brewmaster Mitch Steele

Appearance: Pours golden with a creamy white head.

Aroma: Intensely aromatic with stone fruit, white wine and berries driving most of the hop character. Lots of yeast esters, a touch of alcohol, and a nice malt backbone follow after the hop aromatics.

Taste: Fruity, strong melon, tropical, and hints of citrus with a balanced malt character.

Palate: Dry and very bitter. Just the way we like it!

Overall: When Jamil, Julian and I first started discussing this beer, I don’t think we even considered brewing anything other than a double IPA. So the question became: “How do we make this beer unique and something that reflects all of our approaches to brewing this wonderful beer style?” Julian suggested first wort hopping with Chinook and using a four-way blend of hops in the whirlpool and dry hop. Jamil suggested the malt bill, which includes the use of biscuit malt, something I’ve never used before in an IPA. As a result, the beer has a great blend of fruit flavors and an intense bitterness coming from the hops, which the three of us love.

Glutenberg IPA

The Glutenberg IPA brings hops, flavor and gluten-free brewing to a whole new level. The IPA has everything to become a fan favorite: an aromatic nose full of citrus, lemon and floral notes, a crisp and sharp mouthfeel paired with light caramel and hoppy flavors. A flavorful, very flavorful quencher.

6% ABV, 44 IBU's. Pair this with ceviche or carrot cake.

All Summer, All the Time

Sometimes, a category-defying product comes along and becomes a big hit. That's what we have with Meadowsweet, a Rose wine with grapefruit.

Meadowsweet is a delicious blend of rosé wine and grapefruit. An appealing, pure pink wine with a shimmer of darker pink. The tangy aroma of fresh grapefruit melds irresistibly with the smooth flavor of rosé wine to deliver a vibrant, refreshing treat.


Like many a good rosé, this does come from the Loire Valley, in France.

Vive le France

We're celebrating France today, Bastille Day. Not only are some of the world's best wines produced in France, but some of the best values come from France as well.

We start our own Tour de France in Champagne. There are many styles of sparkling wine produced in France, but none match the quality of Champagne. We suggest the Duc de Romet Brut Champagne Prestige. This non-vintage sparkler scored an impressive 91 points from Wine Spectator. Their review: "A fine, creamy mousse defines this elegant version, underscored by a chalky note of minerality and offering subtle notes of patisserie apple, blanched almond, fresh ginger and a hint of crystallized honey."
At only $26.99 in the Bottle Club®, it's impossible to find a better Champagne in its price range.

Next, we move on to Bordeaux, where Cabernet Sauvignon and Merlot dominate. Since it's a Monday, we'll recommend an every-day wine. The Barton & Guestier Les Charmes de Magnol Medoc is an outstanding choice.

Medoc is a Left Bank appellation, meaning that Cabernet is typically favored over Merlot. Both varietals are included in this wine.

Les Charmes de Magnol is a special selection made by the Barton & Guestier winemakers' team in the prestigious Médoc appellation. The Medoc parcels offer the perfect soil to the two famous Bordeaux varietals: Cabernet Sauvignon and Merlot.

Tasting notes for the Les Charmes: Deep purple red color. Intense and complex on the nose, developing ripe fruits, plums and spicy notes. When swirled, flattering tobacco and coffee hints appear. On the palate, the wine offers a velvety tannic structure with very ripe fruit aromas. The finish is long and elegant.

Naturally, we'll next explore the Burgundy region. Here, Gamay and Pinot Noir excel, as does Chardonnay. The Gamay is often overlooked because of the Beaujolais Nouveau, but in-the-know wine drinkers can grab some outstanding Gamay-based wines at incredible prices. One such wine is the Domaine Balandras Les Gravieres Macon Serriere.

It's an intense ruby red, with purple reflection. The nose is strawberry, spice and licorice. Soft tannins that still exhibit great length abound. The terroir influence had a surprising and very pleasant minerality to the great 100% Gamay. Mâcon-Serrières goes marvelously well with fine charcuterie, braised beef, burgers and tapas. This wine also has the ability to age up to 5 years.

There are some amazing wines produced in the Rhone region. From the simple (Cotes du Rhone) to the extraordinary (Chateauneuf-du-Pape), the Grenache and Syrah-based wines from the Rhone offer something for every palate.

We'll spotlight the Pierre Amadieu Cotes du Rhone Roulepierre, another wine made for daily enjoyment.

Bunches of Grenache and Syrah, grown on chalk and clay soils are strictly sorted to produce this cuvée.

Hand-made harvests and the traditional wine making process express a pleasant color together with red and black fruits scents (blackberry, plum). A sweet touch of licorice enhances the beautiful palate. A mouth filling wine in a pure Rhône style.

Enjoy this wine young, or up to about 5 years, with grilled poultry, or a roasted veal with an unctuous sauce. This is also only $9.96 in the Bottle Club®.

A mid-summer tribute to French wine has to include a Rosé. We recommend the Petit Rimauresq Rosé, from Provence. 

Rosé, with its surprising aromatic subtlety, will lead naturally to the Provencal cuisine. Try the experience of foie gras, or chicken with morels, and you will understand that there is something very different about a meal with a Rosé!

This wine is a rich, red fruited rose, offering flavors of orange, strawberry and spice with a fine mineral backbone and juicy red fruit note on the finish. Only $10.96 in the Bottle Club®.

Naturally, the meal and the day would not be complete without a beautiful dessert wine.  Many of the best French dessert wines, are made for aging, just like a fine Bordeaux or Chateauneuf-du-Pape. Since we want to celebrate now, we chose a wine that's ready to enjoy now.

Look for the 2011 vintage of Château Guiraud Petit Guiraud Sauternes, in a 375ML bottle. This Sauternes rated 90 points from Wine Spectator. "Solid, with a direct, open-knit core of apricot, toasted almond, piecrust and white peach flavors that meld through the creamy, ginger-tinged finish. Drink now through 2018."

New Stuff

Black Dirt Bourbon takes its name from the dark, fertile soil left by an ancient glacial lake that once covered Thousands of acres of upstate New York. Perfectly suited for growing crops such as corn, this Black Dirt has never been used for Bourbon production – until now. The mash bill is 80% local Black Dirt corn, 12% malted barley and 8% rye.

Extremely limited availability. As of this writing, there are only 6 bottles in each store. $42.99 for a 750ML bottle.


J. Lohr 40th Anniversary Red

One of our most popular wines is the J. Lohr Cabernet Sauvignon, along with their other varietals. The winery is celebrating their 40th anniversary with a special bottling.

According to the team at J. Lohr, "The J. Lohr 40th Anniversary Red Wine from Paso Robles is an inspired blend of our most popular varietal, Cabernet Sauvignon, blended with Petite Sirah, Merlot and Malbec, which pays tribute to our first bottling in 1974 and to Jerry’s 40 years on the Central Coast."

J. Lohr’s 40th Anniversary Red Wine is a mélange of four varietals from different vineyards in the Paso Robles appellation that come together as a dense, bold blend that recalls J. Lohr’s very first wine produced—a 1974 Petite Sirah. Coming from vineyards surrounding the Paso Robles Wine Center, as well as their vineyards to the north near San Miguel and to the south near Creston, they have combined their most popular varietal, Cabernet Sauvignon (61%), with the density of Petite Sirah (31%) that thrives so well in the warm, dry climate of Paso Robles. For fruit and dimension, they have added Merlot (5%) and Malbec (3%), which provide the finishing touches to this celebratory blend.

"This deep colored blend lays nearly opaque in the glass with just a youthful ring of magenta to brighten its edges. Weekend Preparations

Since summer weekends are so often spent outside, sometimes visiting friends or family, we thought a couple of easy recipes would be just right. So whether you need something to take with, or if you're just hanging at home, we've got you covered. And because we're like that, dessert comes first.

Liquid Bliss Peanut Butter Cheesecake Cupcakes

Certain beers just beg to be used in baking, and Terrapin's Liquid Bliss is definitely one of those beers! There are a lot of pieces to this recipe, but it's absolutely worth it.

Ingredients

Chocolate Porter Cake

¾ c. Terrapin Liquid Bliss
1 T instant coffee dissolved in ¼ c. warm water
2 sticks unsalted butter
¾ c. unsweetened cocoa powder
2 c. all purpose flour
2 c. sugar
1 ½ t. baking soda
¾ t. salt
2 eggs
2 T. vanilla extract
½ c. plus 2T sour cream

Peanut Butter Cheesecake

1 lb cream cheese, softened
¾ c. firmly packed light brown sugar
½ c. peanut butter (creamy)
1 ½ T vanilla
2 room temperature eggs

Chocolate Ganache Buttercream

1 c. heavy whipping cream
1 ½ c. dark chocolate (bittersweet) chips
1 t. vanilla
2-3 sticks butter (depends on how much you want. I used two) cut into pieces, softened
1-2 c. powdered sugar
crushed pretzels
chopped peanuts

Instructions

1. preheat oven to 350 degrees and line 35 muffin tins with paper liners

Chocolate Porter Cake

a. In a medium saucepan over medium heat, bring porter, coffee mixture and butter to a simmer. Add cocoa powder and whisk until mixture is smooth. Cool.
b. In a large bowl, whisk together flour, sugar, baking soda and salt. Beat eggs, vanilla and sour cream just until blended.
c. Add stout-chocolate mixture to the egg mixture and beat until just combined. Make sure the mixture is cool so that it doesn’t cook the eggs. Gradually add flour mixture and beat on low.

For the Peanut Butter Cheesecake

a. Beat the cream cheese in an electric mixer until smooth. Add the brown sugar, peanut butter, heavy whipping cream and vanilla and beat until combined. Add the eggs, one at a time, beating just until combined.
b. Put 2 T. peanut butter cheesecake in the bottom of cupcake liners. Top with 2 T. of the chocolate stout cake. Bake for 20 minute or until a toothpick inserted in the middle comes out clean.

For the Whipped Chocolate Ganache Buttercream

a. Place the chocolate chips in the mixer bowl. Bring the heavy whipping cream to a boil over medium heat. Pour over the chocolate chips and let set for one minute and stir until chocolate is melted. Add vanilla and stir. Beat the chocolate mixture on low until the bowl feels cool to the touch. Add butter and increase speed to medium-high until mixture is well combined, thickened and slightly whipped, about 2 minutes. Add 1-2 cups of powdered sugar to taste. Take note that the frosting will not be sugary sweet. It will taste more like a bittersweet chocolate pudding. It will also not be a stiff like a traditional frosting, but it will creamier.
b. Frost each cupcake and top with crushed pretzels and chopped peanuts. Refrigerate overnight and let set out at least 5 minutes before eating.

Filet Mignon with Blackberry Wine Reduction

A main course a little closer to home, courtesy of Tomasello Winery.

Perfect with Garlic Mashed Potatoes
Serves 2

Ingredients
10 ozs. - Tomasello Blackberry Wine
2 - 8 oz. center-cut filet mignons, trimmed and skinned
1 white onion, medium-sized, julienned
2 Tbs. extra virgin olive oil
salt and fresh ground pepper to taste

Rinse filets in cool water and pat dry with a clean paper towel. Season filets on both sides with salt and pepper and set aside on plate.

Julienne the onions and set aside. Set oven to low heat – approximately 170 degrees Fahrenheit. Heat skillet to medium high temperature using 1 tbs. of olive oil. Sear filets on both sides to your liking.

Set in oven-proof plate and place in oven to keep warm.

Using the same pan, sauté the julienned onion adding remaining olive oil, caramelizing them to a golden brown. De-glaze onions in pan with 10 ozs. Tomasello Blackberry Wine.

Cuvée M Fruit Bowl

Like the dessert recipe above, this has a lot of parts, but it's perfect for entertaining. This features Mumm Cuvée M sparkling wine, which is slightly off-dry.

1/3 C. white sugar
1/3 C. brown sugar
1/3 C. water
1 10-lb. ripe watermelon
3 apples, cored and sliced into wedges
2 peaches, pit removed and sliced into wedges
2 kiwi fruit peeled, halved and thinly sliced
2 C. green grapes, stemmed
¼ C. freshly squeezed lemon juice
¼ C. freshly squeezed lime juice
1 C. (1/2 pint) blueberries
3 C. strawberries, hulled and halved
1 C. raspberries or blackberries
½ bottle Mumm Napa Cuvee M

Mix sugars and water in a small saucepan and bring to a boil; lower to simmer and cook for 5 minutes.  Remove from heat to cool, and set aside.

To prepare watermelon bowl, measure one third down on sides and cut top third off, using a large knife.  Retain.  Scoop out the flesh of the melon with a melon baller, and set aside in a large glass bowl.  Serrate the cut edge of the melon, cover with plastic wrap and place in refrigerator.

In a large bowl combine the apples, peaches and kiwi with the lemon and lime juices, mixing gently to avoid bruising.  Add the watermelon balls, the rest of the fruit and the sugar syrup.  Toss gently and refrigerate, covered.

When ready to serve, place all fruit in the watermelon bowl and pour half a bottle of Cuvee M over the fruit.  Note: To prevent the bowl from tipping, and to maintain the cool temperature, place in a larger receptacle with ice.

Grilled Jamaican Jerk Chicken

Courtesy of Rombauer Chardonnay, this is a perfect grilling treat.

Combine in a food processor or blender and puree:
-1⁄3 cup fresh lime juice
-Up to 10 habanero or Scotch bonnet peppers (three is fine for most everyone, six is not, eight is probably too many)
-2 tablespoons distilled white vinegar
-(2 tablespoons fresh orange juice)
-3 scallions, coarsely chopped
-2 tablespoons dried basil
-2 tablespoons dried thyme
-2 tablespoons yellow mustard seeds (highly recommended) or 1 tablespoon dry mustard
-2 teaspoons ground allspice
-1 teaspoon ground cloves
-1 teaspoon salt
-1 teaspoon black pepper
The mixture should have the consistency of thick tomato sauce. If necessary, thin with additional:
-(Lime juice, vinegar, or orange juice)

Brush the jerk mixture over:
-8 whole chicken legs or 8 bone-in chicken breast halves
You can slap it on the grill right then and there, or refrigerate and let marinate in a bowl or plastic bag for 1 hour or more (preferably three, ideally twelve). The flavor payoff is worth planning ahead.

To grill, lightly oil the grill rack and prepare a medium-hot charcoal fire. Spread the hot coals on one side of the grill. Arrange the chicken pieces skin side down on the side of the grill away from the coals. Cover the grill and cook for 20 minutes. Turn the chicken and cook 15 to 20 minutes more.
