Sippin' by the Sea

Our little corner of the world seems to slow down a bit in July and August. Between summer vacations and weekends down the Shore (for our South Jersey friends) or at the beach (for most everyone else), our pace just isn't as frenetic as usual. That gives us time to put together and savor some of these classic cocktails.

Singapore Sling

Invented about 100 years ago at the Raffles Hotel in Singapore, you'll enjoy some dazzling flavors in this cocktail.

2 oz. Hendricks Gin
2 oz. pineapple juice
¾ oz. fresh lime juice
¾ oz. Cherry Heering
2 tsp. Bénédictine
2 tsp. Cointreau
2 dashes grenadine
1 dash Angostura bitters
Soda water
Mint leaves, to garnish
Lemon slice, to garnish

Combine all ingredients in a cocktail shaker filled with ice. Shake until well chilled and strain into an ice-filled Collins glass. Fill the rest of the glass with soda water and garnish with lemon and mint to serve.

Pisco Sour

Pisco is an eau de vie distilled from grapes, and it originated in South America. So when you have to duck inside to watch the World Cup, a batch of Pisco Sours may be a perfect fit.

1 oz. Capel Pisco
¾ oz. simple syrup
½ oz. fresh lime juice
½ lightly beaten egg white
1 dash Angostura bitters

Combine all ingredients in a cocktail shaker filled with ice. Shake until well chilled. Strain into a chilled cocktail glass filled with ice to serve.

Paloma

A popular Mexican cocktail.

2 oz El Jimador Tequila Blanco (look for the sale price in tomorrow's email)
Juice of half a lime
3 oz grapefruit juice
3 oz soda
pinch salt
Lime wedge, for garnish

Combine tequila, lime juice and a pinch of salt in a highball or Collins glass. Add ice and top with grapefruit and soda. Stir gently, then serve with a lime wedge garnish.
